Shrimp Scampi w/ White Wine Sauce

Super easy and so very delicious! Perfect for a quick weeknight dinner and romantic enough to make for a great date night dinner.

Shrimp Scampi with White Wine Sauce

Ingredients:
- 2 cups water
- 4 cups vegetable or chicken broth
- 4 tsp or 4 cloves minced garlic
- 1 box Linguine noodles (or pasta of choice)
- 1/4-1/2 cup chopped onion
- 4 tbsp butter
- 1 bunch parsley (destemmed & chopped)
- 3/4 lb raw shrimp (large)
- Spices: 1/2 tsp crushed red pepper, 1 tsp basil, pinch of salt & pepper, 1/2 tsp seasoning salt
- 1/2 cup white wine
- 1/4 cup heavy whipping cream
- 1 cup shredded cheese (parmesan preferred)
- 1 bunch asparagus

Directions:
1. Place large pot on burner w/1 tbsp of butter and turn to medium high.
2. Add garlic to pot. Let cook 1-2 minutes.
3. Add water and vegetable broth to pot, bring to a boil.
4. Add linguine to pot and turn heat to medium.
5. Place large saute pan on another burner, turn temp to med high, add 2 tbsp butter.
6. When butter has melted, add garlic and let cook for 1-2 minutes.
7. Add onions, turn temp down to medium, cook for 2-3 minutes.
8. Keep an eye on your linguine noodles, if there is a lot of liquid still in the pot then turn the heat up higher to help liquid evaporate faster.
9. Add shrimp and spices to pan. Saute until shrimp are slightly pink and opaque.
10. Add white wine and parsley. Cook until shrimp are fully cooked (pink and opaque).
11. Add diced tomatoes. Let simmer ~5 minutes.
12. When there is ~1 cup or less of liquid remaining with the linguine noodles, add your shrimp scampi to the pot.
13. Turn burner to medium-low, add heavy cream and cheese. Stir until combined. Let sit for 3-5 minutes until sauce has thickened. Serve with parmesan cheese and parsley on top!

Directions for asparagus:
1. Place 1 tbsp of butter in medium saute pan on medium high heat.
2. Add asparagus and seasoning salt once butter has melted.
3. Saute for 2 minutes until coated with butter and seasoning. Add 1-2 tbsp of water and cover.
4. Let cook for ~5 minutes or until water has evaporated.
5. Remove lid and cook uncovered until desired firmness.
6. Remove from heat.

Asparagus tastes delicious as a side dish but can also be added to the linguine when your shrimp scampi is ready!
