Thai Red Curry Soup

Thailand is one of my favorite countries and Thai food is definitely one of my favorite foods. Throughout my years of travel I’ve spent over 3 months there and I’m all for anything that takes me back, even if it’s just a quick meal. Foods are like photographs for me, leaving behind trails of memories that I can taste to remember moments. Red and green curries are what I ate almost everyday in Thailand and although this may not be a traditional Thai recipe it is bringing all of those flavors home. This soup is bursting with flavor in every bite and will leave you wanting more and more! The Serrano peppers really add some heat and lime and cilantro just make everything taste better. Enjoy this wonderful taste of Thailand!

Ingredients:
- 2 tbsp avocado oil
- 1 1/2 lbs boneless, skinless chicken breast, cut into 1-inch chunks
- Salt & pepper to taste
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1/2 onion, diced
- 3 tbsp red curry paste
- 1 tbsp freshly grated ginger
- 6-8 cups chicken broth
- 1 (13.5 oz) can coconut milk
- 1 package rice noodles
- 1 tbsp fish sauce
- 2 tsp brown sugar
- 1 tsp basil
- 1/2 tsp garlic salt
- 1/2 tsp garlic powder
- 2 serrano peppers sliced (optional) or 3 green onions, thinly sliced
- 1/2 cup fresh cilantro leaves (lightly chopped, remove stems)
- 2 tbsp freshly squeezed lime juice (2 limes)

Directions:
1. Heat 1 tbsp avocado oil in medium frying pan over medium heat. Season chicken, add to pan, cook until golden brown (2-3 minutes each side) set aside.
2. Heat 1 tbsp avocado oil in large stockpot or dutch oven over medium heat. Add garlic, onion, bell pepper. Cook, stirring occasionally, until tender (3-4 minutes).
3. Add grated ginger and red curry paste, let cook 1 minute while stirring.
4. Stir in chicken broth, coconut milk, chicken and bring to boil. Lower heat and let soup reduce ~10 minutes.
5. Add rice noodles, fish sauce, and brown sugar until noodles are tender (~5 minutes).
6. Stir in lime juice, additional seasonings (garlic salt, garlic powder, basil, pepper.)
7. Add cilantro and top with Serrano peppers or green onions!
Makes 6-8 servings
