Turkey Noodle Soup

The perfect meal for a cold winter night. Put your leftovers from holiday meals to good use with this delicious feel good soup.

Ingredients:
- 2 tbsp avocado oil (or similar for sautéing)
- 1 cup chopped onions
- 1 cup chopped celery
- 1 cup chopped carrots
- 2-3 cloves minced garlic
- 1 tbsp grated ginger root
- 8 cups chicken stock
- 1 tbsp better than bouillon
- 3 sprigs fresh thyme
- 2 bay leaves
- 1 tsp poultry seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper *optional*
- 1/2 tsp salt
- 1/2 tsp fresh ground pepper
- 1 1/2- 2 cups shredded turkey
- 1 1/2 cups wide egg noodles
- 1/2- 1 can peas (drained)
- 1/2 lemon
- 1 tsp parsley

Directions:
1. Heat oil in dutch oven or large pot over medium heat.
2. Add onions, carrots, celery and saute until tender.
3. Add garlic and grated ginger and saute 1-2 mins.
4. Add bay leaves, chicken stock, bouillon, thyme, and all seasonings. Bring to boil.
5. Add noodles and turkey, bring to boil and cook until noodles are al dente (~7 minutes). 6. Add peas, fresh squeezed lemon, parsley, and any additional seasonings. Boil an additional 2-3 minutes.
7. Serve as is or with some tasty French bread on the side!
