Mexican Stuffed Mini Peppers 🌶

& Cheesy Pigs in a Blanket 🧀

Two finger-food dishes perfect for any party, especially a SUPER BOWL PARTY!! The Mexican Stuffed Mini Peppers are packed full of veggies, making this a great vegetarian friendly and healthy hors d'oeuvres for any party or gathering you may hosting. The Cheesy Pigs in a Blanket are always a hit amongst both kids and adults. The cheese really takes this classic app to another level, they will be gone before you know it!
Here are the recipes for these two tasty apps:

 

MEXICAN STUFFED MINI PEPPERS
Ingredients:
- 1-2 bags of mini sweet peppers OR 1 bag + 2-3 bell peppers (red, yellow, orange)
- 1 1/2 cup long grain white rice
- 1 cup chopped onion
- 1 bunch green onions finally chopped
- 1 whole or 1 cup finally chopped red bell pepper or red mini sweet bell pepper
- 2 tbsp butter
- 2 1/2 cups vegetable broth
- 1 13.5 oz can diced tomatoes
- 1 13.5 oz can or 1 cup corn (drained)
- 1 13.5 oz can black beans (drained)
- 1 cup Mexican shredded cheese
- Cilantro
- Spices: 1/2-1 tsp each of Cumin, chili powder, paprika, garlic salt, garlic powder, onion powder, cayenne, salt, pepper (to taste)
- lime + jalapeños + sour cream + salsa for toppings

Directions:
1. Chop onions, green onions, red bell or mini sweet onions.
2. Melt 2 tbsp butter over medium heat in large pan. Add chopped veggies, rice, vegetable broth, canned tomatoes, and spices. Stir, cover, and let simmer for 20 minutes. 3. Preheat oven to 400 degrees.
4. Cut peppers lengthwise and scoop out seeds and membranes to make your pepper boats.
5. Grease bottom of casserole dish.
6. When the filling is ready check the spice level, add any additional spices here to taste, fluff the rice, and add corn and black beans.
7. Spoon filling into peppers, making sure to pack fully to the top.
8. Sprinkle cheese over top of all peppers.
9. Bake on middle rack covered for 20 minutes, remove foil and bake an additional 10 minutes. *For regular sized bell peppers bake for 30 minutes*
10. Top with cilantro, squeeze of lime, and jalapeños if your guests like spicy, serve with sour cream & salsa.
**This filling makes enough for 2 batches of mini sweet peppers or for 1 batch of minis and two bell peppers OR serve extra on the side as another appetizer!**

CHEESY PIGS IN A BLANKET
Ingredients:
- 2 pkgs lit'l smokies or Vienna sausages
- 2 tubes pillsbury crescent rolls
- 1 package sliced cheese (Swiss is preferred)
- 4 tbsp butter
- Parsley for garnish

Directions:
1. Preheat oven to 375.
2. Unroll crescent dough, cut each triangle into 3 smaller triangles.
3. Cut small pieces of cheese and place on top of each triangle.
4. Roll 1 mini sausage into each triangle (on top of cheese), starting from wider end going to smaller end.
5. Place on baking sheet 0.5 in apart.
6. Melt butter and use basting brush to brush on tops. *can also add salt or everything bagel seasoning here*
7. Bake in oven for 12-15 mins until golden brown.
8. Sprinkle parsley on top as a garnish.
9. SERVE!
**Another tip to make a simple dish with lit'l smokies is to bring to boil in a small saucepan 1 cup of bbq sauce along with 1 pkg of lit'l smokies. So easy to make and a hit every time!**
