Black Bean Enchiladas

Extra cheesy and oh so tasty. The perfect meal to switch it up for Taco Tuesday. 

It's Taco Tuesday and I'm feeling festive so let's make some enchiladas! Tonight we are making black bean enchiladas, feel free to add some shredded chicken or other veggies in with your filling too! This will make 6-8 enchiladas depending on how much filling you use in each, I usually try for 2 spoonfuls in each tortilla. Have some fun with it!

Ingredients:
- 1 tbsp avocado oil
- 2 cloves garlic minced
- 1 cup diced onion
- 1 (15 oz) can black beans 
- 1 (14 oz) jar enchilada sauce (only using half)
- 1-2 tbsp chopped pickled jalapeños (optional)
- 1/2-1 cup chunky salsa
- 1 pkg corn tortillas
- 2 serrano peppers
- 1/2 bunch of cilantro (chop & de-stem half of this)
- 1 pkg Mexican style shredded cheese
- 1 cup spinach (2 handfulls)
- 1 lime
- Cotija cheese
- 1/2 tsp cumin
- 1/4 tsp chili powder
- 1/2 tsp garlic salt
- 1/2 tsp garlic powder
- pinch of salt & pepper

Directions:
1. Heat avocado oil on medium heat in large saute pan.
2. Add garlic to pan, saute for 1-2 mins.
3. Add onion, saute for 2-3 mins.
4. Add black beans, cumin, chili powder, garlic salt, garlic powder, 1/2 of cilantro that has been chopped & de-stemmed, and jalapeños stir and let saute 5 mins.
5. Add salsa, spinach, juice of half the lime (squeezed), and handful of cheese. Turn heat to low and let cook until cheese is melted. Leave on stove on low heat for a few minutes while preparing enchilada filling station. Preheat oven to 350 degrees.
6. Grease bottom of medium or large size rectangular baking dish (will hold 6-8 enchiladas).
7. Spray medium sized saute pan with non-stick cooking spray and turn heat to medium. Place first two tortillas in pan and cook for 1-2 mins on each side. When done place on plate, spoon filling in, roll, and place into baking dish.
8. Repeat until you have used all filling. Top with 1/2 jar of enchilada sauce or to desired amount of sauce for topping. Sprinkle more cheese on top and add some cotija cheese on top (1-2 tbsp).
9. Cover with foil and place until oven on center rack.
10. Cook for 15-20 minutes, until cheese on top has melted.
11. Take out of oven and top with desired garnishes: lime slices, serrano peppers, cilantro.
12. Serve with refried beans & Mexican rice, maybe some sour cream and guacamole too!
